It's All About Fermentation & Hydration

Our authentic neapolitan pizza is built on the traditons of naples. Using the finest Caputo Flours, Fermented for a minimum of 72 hours and hydrated to just the right level to ensure a deliciously chewy but also crispy crust with a delicious mature flavour profile.
